Instructions
- Rinse sushi rice under cold water until clear, then cook according to package instructions.
- While the rice cooks, heat olive oil in a skillet over medium heat. Cook shrimp for 3-4 minutes until pink and opaque; drizzle with Sriracha.
- In a bowl, mix rice vinegar, sugar, and salt until dissolved; gently fold into warm cooked rice.
- Slice cucumber and dice avocado; set aside.
- In a mold or ring on a serving plate, layer sushi rice, shrimp, cucumber strips, and avocado cubes.
- Top with toasted sesame seeds and nori strips for garnish.
