  • 1 cup sushi rice
  • 1 lb fresh shrimp (peeled and deveined)
  • 2 tbsp Sriracha sauce (adjust to taste)
  • 1 ripe avocado (diced)
  • 1 medium cucumber (sliced into strips)
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 pinch salt
  • 1 tbsp olive oil
  • 2 tbsp toasted sesame seeds
  • 2 sheets nori (cut into strips)

Instructions

  1. Rinse sushi rice under cold water until clear, then cook according to package instructions.
  2. While the rice cooks, heat olive oil in a skillet over medium heat. Cook shrimp for 3-4 minutes until pink and opaque; drizzle with Sriracha.
  3. In a bowl, mix rice vinegar, sugar, and salt until dissolved; gently fold into warm cooked rice.
  4. Slice cucumber and dice avocado; set aside.
  5. In a mold or ring on a serving plate, layer sushi rice, shrimp, cucumber strips, and avocado cubes.
  6. Top with toasted sesame seeds and nori strips for garnish.
