Instructions

  1. Preheat your oven to 400°F (200°C). Halve the butternut squash, remove seeds, drizzle with olive oil, season with salt, and place cut-side down on a baking sheet. Roast for 30-40 minutes until tender.
  2. Cook fettuccine in salted boiling water according to package instructions until al dente.
  3. In a skillet over medium heat, warm olive oil. Add minced garlic and red pepper flakes; sauté for about one minute until fragrant.
  4. Scoop roasted squash into a blender, adding reserved pasta water gradually until smooth.
  5. Toss cooked pasta in the skillet with garlic and red pepper flakes, then add butternut squash puree and stir until heated through.
  6. Serve topped with grated Parmesan cheese and garnish with fresh herbs if desired.
