  • 4 oz high-quality smoked salmon, chopped
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 tsp freshly cracked black pepper
  • Fresh parsley, for garnish

Instructions

  1. Prepare your pasta: Boil salted water in a large pot, add pasta, and cook until al dente (8-10 minutes). Reserve some pasta water before draining.
  2. Make the sauce: In a bowl, whisk together eggs and heavy cream. Stir in Parmesan cheese and black pepper.
  3. Sauté garlic: In a skillet over medium heat, sauté minced garlic until fragrant (about 1 minute). Add chopped smoked salmon and warm through.
  4. Combine: Add drained pasta to the skillet with garlic and salmon. Pour egg mixture over the hot pasta, tossing quickly to coat evenly.
