- 1 lb ground beef (80/20)
- 4 large flour tortillas
- 2 cups shredded cheddar or Monterey Jack cheese
- 1 medium onion, sautéed
- 1/2 cup dill pickles, sliced
- 2 tbsp mustard
- 2 tbsp ketchup
- 2 tbsp oil for cooking
Instructions
- Chop onions and slice pickles.
- In a skillet over medium-high heat, add ground beef, season with salt and pepper, and cook until browned.
- Add sautéed onions to the cooked beef and stir for two minutes.
- On each tortilla, layer half with cheese, then beef mixture, pickles, mustard, ketchup, and top with more cheese. Fold carefully.
- Heat oil in a clean skillet over medium heat and cook folded quesadilla until golden brown on both sides (about 3-4 minutes per side).
