- 3–4 boneless, skinless chicken breasts
- 1 cup fresh pineapple, diced
- 1 can (15 oz) black beans, rinsed
- 1 cup bell peppers, diced (mixed colors)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 2 cups low-sodium chicken broth
- 2 tbsp chili powder
- 1 tsp cumin
- Juice of 1 lime
- Fresh cilantro (optional), for garnish
Instructions
- Sear the chicken breasts in a skillet over medium heat until golden brown on both sides (about 5 minutes per side).
- Place the seared chicken at the bottom of the slow cooker. Top with diced pineapple, black beans, bell peppers, onion, garlic, chili powder, cumin, and lime juice.
- Pour enough low-sodium chicken broth to cover the ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Shred the chicken directly in the slow cooker using two forks. Stir well before serving.
