  • 34 boneless, skinless chicken breasts
  • 1 cup fresh pineapple, diced
  • 1 can (15 oz) black beans, rinsed
  • 1 cup bell peppers, diced (mixed colors)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Juice of 1 lime
  • Fresh cilantro (optional), for garnish

Instructions

  1. Sear the chicken breasts in a skillet over medium heat until golden brown on both sides (about 5 minutes per side).
  2. Place the seared chicken at the bottom of the slow cooker. Top with diced pineapple, black beans, bell peppers, onion, garlic, chili powder, cumin, and lime juice.
  3. Pour enough low-sodium chicken broth to cover the ingredients.
  4. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred the chicken directly in the slow cooker using two forks. Stir well before serving.
