  • 28 oz canned diced tomatoes (fire-roasted preferred)
  • 4 cups low-sodium beef broth
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 2 tsp Italian seasoning
  • Fresh basil or parsley for garnish

Instructions

  1. Prepare your slow cooker by plugging it in and setting it to low heat.
  2. In a skillet over medium heat, brown the ground beef or sausage. Drain excess fat if necessary.
  3. Sauté chopped onions and minced garlic in the skillet until onions are translucent (about 3 minutes).
  4. Transfer the meat mixture to the slow cooker; add diced tomatoes, beef broth, Italian seasoning, salt, and pepper. Stir well.
  5. Add broken lasagna noodles and mix gently.
