  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup full-fat coconut milk
  • 1/2 cup natural peanut butter
  • 2 tbsp low-sodium soy sauce
  • Juice of 2 limes
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • Fresh cilantro (for garnish)

Instructions

  1. In a bowl, whisk together coconut milk, peanut butter, soy sauce, lime juice, garlic, and ginger until smooth.
  2. Cut chicken breasts into bite-sized pieces and coat them with the marinade in a resealable bag or bowl. Marinate in the fridge for at least 1 hour or overnight.
  3. Transfer marinated chicken and any remaining marinade to the slow cooker. Spread evenly.
  4. Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender.
