  • 34 boneless, skinless chicken breasts
  • 1 can (15 oz) kidney beans, rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 4 cups low-sodium chicken broth
  • 1 bell pepper, chopped (any color)
  • Fresh cilantro (optional)

Instructions

  1. Chop onion and bell pepper; mince garlic.
  2. Optional: In a skillet over medium heat, sauté onion and garlic until translucent.
  3. Place chicken in the slow cooker. Add beans, tomatoes, bell pepper, sautéed mixture, chili powder, cumin, and broth.
  4. Cover and cook on low for 6-8 hours or high for 4 hours.
  5. Shred cooked chicken with two forks and stir back into the chili.
