- 3–4 boneless, skinless chicken breasts
- 1 can (15 oz) kidney beans, rinsed
- 1 can (14.5 oz) fire-roasted diced tomatoes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 tbsp chili powder
- 1 tsp cumin
- 4 cups low-sodium chicken broth
- 1 bell pepper, chopped (any color)
- Fresh cilantro (optional)
Instructions
- Chop onion and bell pepper; mince garlic.
- Optional: In a skillet over medium heat, sauté onion and garlic until translucent.
