  • 1 cup short-grain sushi rice
  • 1 ΒΌ cups water
  • 3 tablespoons low-sodium soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or maple syrup (optional)
  • 1 cup assorted vegetables (e.g., cucumbers, carrots, avocado)
  • 1 tablespoon toasted sesame seeds
  • 2 green onions, chopped

Instructions

  1. Rinse the sushi rice under cold water until clear. Combine with water in a pot, bring to boil, then reduce heat and cover for 15 minutes.
  2. Season the salmon fillets with salt and pepper. Heat olive oil in a skillet over medium-high heat and cook salmon for about 4-5 minutes on each side until golden and flaky.
  3. In a small bowl, whisk together soy sauce, rice vinegar, and honey/maple syrup.
  4. Slice the vegetables into thin strips.
  5. Fluff the cooked rice and divide into bowls. Top with flaked salmon, vegetables, and drizzle with sauce.
