  • 1 red bell pepper (diced)
  • 1 yellow bell pepper (diced)

  • Juice of 2 limes
  • 2 tbsp extra virgin olive oil

  • Salt & pepper to taste

Instructions

  2. Toss cubed sweet potatoes in olive oil, salt, and pepper. Spread on a baking sheet in a single layer and roast for 25-30 minutes until golden brown.
  3. Rinse quinoa under cold water and cook according to package instructions (approximately 15 minutes) until fluffy.
  4. In a large bowl, combine roasted sweet potatoes, cooked quinoa, black beans, diced bell peppers, and chopped cilantro. Squeeze lime juice over the mixture.
  5. Season with cumin, chili powder, salt, and pepper; toss well to combine.
