  • 4 ripe bananas (about 500g, mashed)
  • 1 ½ cups all-purpose flour (190g)
  • ¼ cup unsweetened cocoa powder (25g)
  • 1 tablespoon gel red food coloring
  • ½ cup granulated sugar (100g)
  • ½ cup brown sugar (100g)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 large eggs
  • ⅓ cup vegetable oil (80ml)
  • 2 teaspoons vanilla extract
  • ½ teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. In a large bowl, mash ripe bananas until smooth. Mix in vegetable oil until combined.
  3. Add granulated sugar, brown sugar, eggs, and vanilla extract; mix well.
  4. In another bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  5. Gradually fold dry ingredients into wet mixture until just mixed.
  6. Stir in red food coloring until desired color is achieved.
  7. Pour batter into the prepared loaf pan and bake for 60-70 minutes or until a toothpick comes out clean.
  8. Cool for 10 minutes in the pan before transferring to a wire rack.
