Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, cloves, and salt.
  3. In a large bowl, beat softened butter with brown sugar and granulated sugar until light and fluffy (3-5 minutes).
  4. Mix in the pumpkin puree and vanilla extract until smooth.
  5. Gradually add the dry ingredients to the wet mixture on low speed until just combined.
  6. Fold in nuts if using.
  7. Spoon dough onto prepared baking sheets and bake for 15-20 minutes until edges are lightly golden but centers remain soft.
