  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1 cup pumpkin puree (100% pure)
  • 2 large eggs
  • 1/2 cup brown sugar (dark preferred)
  • 1 cup chopped pecans
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp ground ginger
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper.
  2. For the crust, mix flour, granulated sugar, melted butter, and salt until crumbly. Press evenly into the bottom of the prepared dish.
  3. Bake the crust for about 15 minutes until lightly golden.
  4. In another bowl, whisk together pumpkin puree, eggs, remaining sugar, spices, and vanilla until smooth.
  5. Pour the pumpkin filling over the baked crust and spread it evenly.
  6. Combine chopped pecans with brown sugar and melted butter in a bowl. Sprinkle this topping over the pumpkin layer.
  7. Bake for another 25-30 minutes until set but slightly jiggly in the center.
  8. Allow to cool completely before slicing into bars.
