  • 1 cup canned pumpkin puree
  • 1 ½ cups all-purpose flour
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 1 tsp baking soda
  • 1 tsp cinnamon

  • 2 large eggs (room temperature)
  • ⅓ cup vegetable oil
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mash the ripe bananas until smooth.
  3. In another bowl, whisk together mashed bananas, pumpkin puree, eggs, and vegetable oil until creamy.
