  • 4 (6 oz) wild-caught salmon fillets
  • 1 cup fresh pineapple chunks
  • 2 chipotle peppers in adobo sauce (adjust to taste)
  • 2 tbsp honey
  • 3 garlic cloves, minced
  • 2 tbsp freshly squeezed lime juice
  • 2 tbsp chopped fresh cilantro (optional)

Instructions

  1. Preheat your grill or oven to medium-high heat (400°F/200°C). If using an oven, line a baking sheet with parchment paper.
  2. In a blender, combine pineapple chunks, chipotle peppers, honey, garlic, and lime juice until smooth.
  3. Place salmon fillets in a shallow dish and pour half of the marinade over them. Allow to marinate for at least 30 minutes.
  4. Grill salmon skin-side down for 6-8 minutes per side or bake for 12-15 minutes until flaky.
  5. During the last few minutes of cooking, brush remaining marinade onto salmon.
  6. Garnish with cilantro before serving and pair with rice or salad.
