- 1 cup heavy cream
Instructions
- Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan. Bake for 8 minutes.
- In another bowl, beat softened cream cheese until smooth. Gradually add sugar and mix well. Stir in vanilla extract and add eggs one at a time, mixing on low speed.
- Pour filling over the baked crust and bake for 50–60 minutes or until set but slightly jiggly in the center.
- Let cool at room temperature for an hour; then refrigerate for at least four hours or overnight.
- For the caramel topping, combine corn syrup, sugar, and heavy cream in a saucepan over medium heat. Stir until bubbling and simmer for 5–7 minutes. Stir in pecans.
- Remove cheesecake from the pan and pour warm caramel topping over slices before serving.
