  • 1 red bell pepper, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño pepper, seeded and diced (optional)
  • 1/2 cup crumbled feta cheese
  • 1/2 cup chopped cilantro
  • Juice of 2 limes
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Remove kernels from the corn; if using frozen corn, thaw it.
  2. Dice the red bell pepper, red onion, and jalapeño.
  3. In a large bowl, combine corn, diced veggies, feta cheese, and cilantro.
  4. Squeeze lime juice over the mixture, add olive oil, and season with salt and pepper.
  5. Toss everything gently until well combined.
