- 1 medium cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 medium red onion, finely chopped
- 1 bell pepper (any color), diced
- 1/4 cup fresh parsley or mint, chopped
- 3 tbsp extra virgin olive oil
- Juice of 1 lemon (about 2 tbsp)
- Salt and pepper to taste
Instructions
- Rinse the lentils under cold water until clear. In a pot, combine rinsed lentils with enough water to cover by about an inch. Bring to a boil, then reduce heat and simmer for 15-20 minutes until tender but not mushy. Drain and let cool.
- While the lentils cook, dice the cucumber, halve the cherry tomatoes, chop the red onion and bell pepper.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- In a large bowl, combine cooled lentils with vegetables and herbs. Drizzle with dressing and toss gently to combine. Adjust seasoning as needed.
