Ingredients

  • 1 cup green or brown lentils
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 medium red onion, finely chopped
  • 1 bell pepper (any color), diced
  • 1/4 cup fresh parsley or mint, chopped
  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon (about 2 tbsp)
  • Salt and pepper to taste

Instructions

  1. Rinse the lentils under cold water until clear. In a pot, combine rinsed lentils with enough water to cover by about an inch. Bring to a boil, then reduce heat and simmer for 15-20 minutes until tender but not mushy. Drain and let cool.
  2. While the lentils cook, dice the cucumber, halve the cherry tomatoes, chop the red onion and bell pepper.
  3. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  4. In a large bowl, combine cooled lentils with vegetables and herbs. Drizzle with dressing and toss gently to combine. Adjust seasoning as needed.
  5. Serve chilled or at room temperature.
