  • 3 lbs beef chuck roast
  • 2 medium sweet onions, chopped
  • 5 cloves garlic, minced
  • 4 large carrots, sliced
  • 2 cups low-sodium beef broth
  • 1 cup dry red wine
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Gather and chop onions and carrots; mince garlic.
  2. Heat olive oil in a Dutch oven over medium-high heat. Sear the beef on all sides until golden brown (3-4 minutes per side).
  3. Remove the roast, add onions and garlic to the pot, cooking until softened. Pour in red wine to deglaze the pot.
  4. Return the beef to the pot with carrots and herbs. Add beef broth until ingredients are halfway submerged.
  5. Cover and bake in a preheated oven at 300°F (150°C) for 3-4 hours until fork-tender.
  6. Let rest before slicing and serve with mashed potatoes or crusty bread.
