  • 1 cup whole wheat flour
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1 tbsp ground cinnamon
  • Pinch of salt
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Grate the zucchini and squeeze out excess moisture using a kitchen towel.
  3. In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  4. In another bowl, combine eggs, applesauce, vanilla extract, and grated zucchini until smooth.
  5. Gently fold the dry ingredients into the wet mixture until just combined.
  6. If desired, fold in chopped nuts.
  7. Pour the batter into the prepared loaf pan and bake for 50-60 minutes or until golden brown and a toothpick comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
