Instructions

  4. In another bowl, whisk flour, baking powder, salt, and lemon zest; gradually add this mixture to the wet ingredients until combined.
  5. Scoop dough onto prepared sheets and chill in the refrigerator for 30 minutes.
  6. Bake for 12-15 minutes until edges are golden but centers remain soft; cool slightly.
  7. Make an indentation in each cookie and fill with lemon curd; sprinkle coarse sugar on top and caramelize using a kitchen torch.
