  • 3 lbs beef brisket
  • 1 medium green cabbage, chopped
  • 4 medium carrots, cut into sticks
  • 2 large yellow onions, diced
  • 4 garlic cloves, minced
  • 4 cups beef broth
  • 2 bay leaves
  • 1 tsp whole peppercorns

Instructions

  1. Gather all ingredients and chop vegetables for even cooking.
  2. Set the Instant Pot to 'Sauté.' Add oil and sear the brisket for 4-5 minutes on each side until golden brown.
  3. Add onions and garlic; sauté for another 2 minutes until fragrant.
  4. Pour in beef broth to cover half of the brisket, then add bay leaves and peppercorns.
  5. Secure the lid and set to 'Manual' pressure cooking for 90 minutes.
  6. Once done, use quick release; layer cabbage and carrot sticks on top of the brisket. Seal again and cook under pressure for an additional 5 minutes.
  7. Serve slices of corned beef with veggies; consider adding mustard or horseradish on top.
