Description

Indulge in the delightful taste of homemade Samoas cookies, where crispy shortbread meets a chewy coconut filling drizzled with rich chocolate. This nostalgic treat is perfect for sharing at gatherings or enjoying during cozy nights at home. With simple ingredients and easy-to-follow steps, you can create these irresistible cookies that will have everyone asking for more!

Ingredients

Scale
  • 1 cup all-purpose flour
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg (room temperature)
  • 2 cups unsweetened coconut flakes
  • 1 cup semi-sweet chocolate chips
  • ½ cup caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, cream together softened butter, granulated sugar, and brown sugar for about 3 minutes until fluffy.
  2. Gradually mix in all-purpose flour on low speed until just combined to form a soft dough. Avoid overmixing.
  3. Wrap the dough in plastic wrap and refrigerate for 30 minutes to prevent spreading during baking.
  4. Roll out the chilled dough to about ¼ inch thickness and cut into circles with a cookie cutter, making small holes in the center of each circle. Bake for 10-12 minutes or until golden brown.
  5. Toast coconut flakes in a dry skillet over medium heat until golden brown; mix with caramel sauce until coated.
  6. Spread caramel-coated coconut on each cookie base and drizzle melted chocolate on top.
