  • 2 cups short-grain sushi rice
  • 1/4 cup rice vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 4 nori sheets
  • 1 medium cucumber, cut into thin sticks
  • 1 ripe avocado, sliced
  • 1 cup imitation crab meat, shredded
  • Sesame seeds (optional)
  • Soy sauce and wasabi for serving

Instructions

  1. Rinse sushi rice under cold water until the water runs clear. Cook according to package instructions until tender.
  2. In a bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the warm rice.
  3. Prepare fillings: slice cucumber into sticks and avocado into strips; shred imitation crab meat.
  4. On a bamboo mat, place a nori sheet shiny side down. Wet hands and spread about 1 cup seasoned rice over nori, leaving a 1-inch border at the top.
  5. Lay cucumber, avocado, and crab horizontally across the center of the rice.
  6. Roll tightly using the bamboo mat while sealing the edge of the nori with moisture from your fingers.
  7. Slice roll into 6-8 pieces with a wet knife and serve with soy sauce and wasabi.
