  • 3 ripe bananas, mashed
  • 1 cup crushed pineapple, drained
  • 1/2 cup unsweetened coconut flakes
  • 1/2 cup macadamia nuts, chopped
  • 1 1/2 cups all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 eggs, beaten
  • 1/4 cup melted coconut oil or butter
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mash bananas until smooth but slightly chunky. Mix in pineapple, eggs, melted coconut oil or butter, and vanilla extract until well combined.
  3. In another bowl, whisk together flour, sugars, baking powder, baking soda, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Gently stir in coconut flakes and macadamia nuts.
  6. Pour batter into the prepared pan and smooth the top.
  7. Bake for 55-65 minutes or until golden brown and a toothpick comes out clean.
  8. Let cool for 10 minutes before transferring to wire racks.
