Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mash bananas until smooth but slightly chunky. Mix in pineapple, eggs, melted coconut oil or butter, and vanilla extract until well combined.
- In another bowl, whisk together flour, sugars, baking powder, baking soda, and salt.
- Gradually fold the dry ingredients into the wet mixture until just combined.
- Gently stir in coconut flakes and macadamia nuts.
- Pour batter into the prepared pan and smooth the top.
- Bake for 55-65 minutes or until golden brown and a toothpick comes out clean.
- Let cool for 10 minutes before transferring to wire racks.
