  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onions and sauté until golden (about 5 minutes).
  2. Increase heat slightly, add ground beef, breaking it apart as it cooks until browned (about 7-10 minutes). Drain excess fat if needed.
  3. Stir in minced garlic and Italian seasoning; cook for about 1 minute until fragrant.
  4. Pour in vegetable broth and bring to a gentle boil. Add orzo pasta, reduce heat to low, cover, and simmer for 10-12 minutes until orzo absorbs most of the liquid.
  5. Uncover and fold in spinach (or kale) and tomato sauce; cook until greens wilted (around 3-4 minutes).
