  • 1/4 cup fresh parsley, chopped
  • 3 cloves garlic, minced
  • 1/2 onion, finely chopped
  • 1/2 cup panko breadcrumbs
  • 1/2 cup Greek yogurt (for tzatziki)
  • 1/2 cucumber, grated (for tzatziki)
  • Juice of 1 lemon
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, combine ground turkey, parsley, garlic, onion, panko breadcrumbs, salt, pepper, and lemon juice. Mix gently until well combined.
  3. Form mixture into small meatballs (about 1 inch in diameter) and place on a lined baking sheet.
