Instructions

- In a large bowl, whisk together gluten-free flour, baking powder, cinnamon, nutmeg, brown sugar, and granulated sugar until well combined.
- In another bowl, beat eggs and mix in pumpkin puree, melted butter (or coconut oil), milk, and vanilla extract until smooth.
- Slowly fold the wet mixture into the dry ingredients using a spatula until just combined—don’t overmix!
