  • 3 large sweet onions, thinly sliced
  • 4 cloves fresh garlic, minced
  • 1 cup beef broth (low-sodium)
  • 1 tbsp balsamic vinegar
  • 1 tbsp low-sodium soy sauce
  • 2 tsp fresh thyme
  • 1 cup Swiss cheese, shredded
  • Salt and pepper to taste
  • 2 tbsp butter

Instructions

  1. Preheat oven to 400°F (200°C) and spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper. In a skillet, melt butter over medium heat. Sauté onions until golden brown (15-20 minutes), then add minced garlic and cook for an additional minute.
  3. Stir in beef broth, balsamic vinegar, and soy sauce into the onion mixture.
  4. Place seasoned chicken in the baking dish and pour the onion mixture over it. Top with Swiss cheese.
  5. Bake for 25-30 minutes until chicken is cooked through and cheese is bubbly.
