  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg (freshly grated)
  • 1 cup milk (dairy or non-dairy)
  • 2 large eggs
  • 2 tbsp brown sugar
  • Butter or oil for greasing

Instructions

  1. In a large bowl, whisk together the flour, baking powder, cinnamon, nutmeg, and brown sugar until well combined.
  2. In another bowl, mix the pumpkin purée, eggs, milk, and vanilla until smooth.
  3. Slowly add the wet ingredients to the dry ingredients while stirring gently; some lumps are fine.
  4. Preheat a non-stick skillet over medium heat and lightly grease it.
  5. Pour about 1/4 cup of batter onto the skillet for each pancake and cook until bubbles form on top (about 3 minutes). Flip and cook until golden brown.
  6. Serve warm with maple syrup or your favorite toppings.
