Instructions

- In another bowl, mix the pumpkin purée, eggs, milk, and vanilla until smooth.
- Slowly add the wet ingredients to the dry ingredients while stirring gently; some lumps are fine.
- Preheat a non-stick skillet over medium heat and lightly grease it.
- Pour about 1/4 cup of batter onto the skillet for each pancake and cook until bubbles form on top (about 3 minutes). Flip and cook until golden brown.
