  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg

  • 2 large eggs (room temperature)
  • ½ cup vegetable oil (or melted butter)
  • 8 oz cream cheese (full-fat)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In one bowl, whisk together flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, eggs, oil, and vanilla until smooth.
  4. Combine wet and dry ingredients gently until just mixed.
  5. In a separate bowl, beat cream cheese with sugar until creamy; blend in egg yolk.
  6. Pour half of the pumpkin batter into the pan. Dollop cream cheese mixture over it and top with remaining batter.
  7. Swirl with a knife for marbling.
  8. Bake for 30-35 minutes or until a toothpick comes out clean. Cool before slicing.
