  • 1 tsp dried oregano
  • 2 bay leaves
  • Juice of 1 lime
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Water or broth (enough to cover beans by an inch)

Instructions

  1. In a large pot over medium heat, add olive oil until shimmering. Sauté diced onion and green bell pepper for about 5-7 minutes until soft.
  2. Stir in minced garlic, cumin, oregano, and bay leaves, cooking for an additional 1-2 minutes until fragrant.
  3. Add soaked black beans (or canned beans) along with enough water or broth to cover by at least an inch. Bring to a gentle simmer.
  4. Reduce heat to low and cover the pot; let it simmer for about 1 hour or until beans are tender. Stir occasionally, adding more liquid if necessary.
  5. Once cooked, remove the bay leaves and stir in salt, pepper, and freshly squeezed lime juice. Adjust seasoning as needed.
  6. Serve hot over rice or with warm tortillas.
