  • 3 cloves fresh garlic, minced
  • 1 tbsp fresh ginger, grated
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup brown sugar
  • 2 tbsp rice vinegar
  • 1 tsp red pepper flakes (adjust to taste)
  • 2 green onions, sliced (for garnish)
  • 1 tsp sesame oil
  • 2 tbsp cornstarch mixed with 3 tbsp water (for thickening)

Instructions

  1. Cut chicken breasts into bite-sized pieces for even cooking.
  2. In a skillet over medium heat, sauté minced garlic and ginger in oil until fragrant (about 1 minute).
  3. Whisk together soy sauce, brown sugar, rice vinegar, sesame oil, and red pepper flakes in a bowl.
  4. Place chicken pieces in the crockpot and pour the sauce mixture over them. Stir gently to coat.
  5. Cover and cook on low for 4-6 hours or high for 2-3 hours until chicken is tender.
  6. Mix cornstarch slurry into the crockpot and cook uncovered on high for an additional 30 minutes until the sauce thickens.
  7. Serve over fluffy white rice or crispy fried rice and garnish with green onions.
