  • 1 lb ground beef (80/20)
  • 4 slices sharp cheddar cheese
  • 4 slices bacon
  • 4 brioche burger buns
  • 1 cup shredded lettuce
  • 1 medium tomato, sliced
  • 2 tbsp mayonnaise
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix ground beef with salt and pepper. Form into four patties about 1 inch thick, making a small indentation in the center of each.
  2. Cook bacon in a skillet over medium heat until crispy. Remove and drain on paper towels, reserving drippings.
  3. Increase heat to medium-high and sear the patties in bacon drippings for 4-5 minutes per side.
  4. Top each patty with cheddar cheese during the last minute of cooking; cover to melt.
  5. Toast brioche buns face down in another skillet until golden brown.
  6. Assemble burgers: spread mayo on bottom bun, layer with lettuce and tomato, add cheesy patty, top with bacon, then finish with the top bun.
