  • For Frosting: 8 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 1 cup whipping cream

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two round cake pans with parchment paper.
  2. Whisk together cake flour, baking powder, and salt in a bowl.
  3. In another bowl, beat softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition. Stir in coconut milk and vanilla extract.
  4. Gradually add dry ingredients to the wet mixture, mixing gently until just combined. Fold in shredded coconut.
  5. Divide batter between pans and bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
  6. Cool cakes in pans for 10 minutes before transferring them to wire racks to cool completely.
