  • 3 overripe bananas (mashed)
  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking soda
  • 2 tsp ground cinnamon
  • 2 large eggs (room temperature)
  • ¼ cup unsalted butter (melted)
  • ½ tsp salt
  • ½ cup walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, mash the overripe bananas until smooth. Stir in melted butter.
  3. Mix in eggs one at a time until well combined.
  4. In another bowl, combine flour, baking soda, salt, and cinnamon; then add to the banana mixture, stirring gently until just combined.
  5. In a small bowl, mix together sugar and cinnamon for the swirl.
  6. Pour half of the batter into the prepared pan. Sprinkle with half of the cinnamon-sugar mixture. Pour in remaining batter and top with more cinnamon-sugar.
  7. Bake for about 60 minutes or until golden brown and a toothpick comes out clean.
  8. Allow cooling for 10 minutes in the pan before transferring to a wire rack.
