  • 1 large ripe mango (about 250g), diced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 tsp fresh ginger, minced
  • 4 green onions, chopped
  • 3 cloves garlic, minced
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp cornstarch
  • 2 tsp sesame oil
  • 2 tbsp vegetable oil

Instructions

  1. Prep the ingredients by cutting chicken into bite-sized pieces, dicing the mango, slicing the bell peppers, and mincing garlic and ginger.
  2. In a bowl, marinate chicken with soy sauce, cornstarch, and sesame oil for about 15 minutes.
  3. Heat vegetable oil in a wok over medium-high heat. Sauté garlic and ginger until fragrant (about 30 seconds).
  4. Add marinated chicken to the wok; cook until golden brown and fully cooked (about 5 minutes).
  5. Stir in bell peppers; cook for another 2-3 minutes until slightly softened.
  6. Gently fold in mango cubes and cook for an additional minute until warmed through.
