  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup panko breadcrumbs
  • 1 cup buffalo sauce
  • 1 cup buttermilk
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper (adjust for spice level)
  • Salt and pepper to taste
  • Cooking oil spray

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut chicken breasts into strips about one inch wide.
  3. In a bowl, mix buttermilk, salt, pepper, garlic powder, onion powder, and cayenne pepper. Soak chicken strips in this mixture for at least 30 minutes.
  4. Dredge each soaked chicken piece in panko breadcrumbs until fully coated.
  5. Place the breaded tenders on the baking sheet and spray lightly with cooking oil.
  6. Bake for 20-25 minutes until golden brown and crispy.
  7. Toss baked tenders in buffalo sauce and return to the oven for an additional 5 minutes.
