  • 1 lb Brussels sprouts, halved
  • 6 oz thick-cut bacon, diced
  • ½ cup toasted hazelnuts, roughly chopped
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 cloves garlic, minced (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Trim the Brussels sprouts and slice them in half.
  3. In a skillet over medium heat, cook the diced bacon until crispy (about 5-7 minutes). Remove from the pan but keep the drippings.
  4. Sauté minced garlic in the bacon drippings until fragrant (about 30 seconds).
  5. In a bowl, combine Brussels sprouts and cooked bacon. Drizzle with olive oil, season with salt and pepper, and mix well.
  6. Spread mixture on a baking sheet in a single layer. Roast for 20-25 minutes until golden brown and crisp-tender.
  7. During the last 5 minutes of roasting, add chopped hazelnuts.
