  • 4 oz pancetta, diced
  • 1 bunch broccoli rabe, chopped (about 10 oz)
  • 3 cloves garlic, minced
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 1/2 cup freshly grated Parmesan cheese
  • Salt to taste
  • Olive oil for sautéing

Instructions

  1. Bring a large pot of salted water to a boil. Add orecchiette pasta and cook according to package instructions until al dente.
  2. In a large skillet over medium heat, sauté diced pancetta until crispy and golden brown. Add minced garlic and cook until fragrant (about 1 minute).
  3. Stir in chopped broccoli rabe and red pepper flakes; sauté for 3-4 minutes until tender but still vibrant green.
  4. Drain the pasta, reserving some pasta water. Combine the pasta with the pancetta and broccoli rabe in the skillet. Mix well, adding reserved pasta water as needed for consistency.
