- 1 cup sharp cheddar cheese, shredded (about 100g)
- 2 large eggs
- 1 cup seasoned breadcrumbs (about 100g)
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt & pepper to taste
- Olive oil spray (for baking)
Instructions
- Preheat oven to 375°F (190°C).
- Wash and chop broccoli into small florets. Blanch in boiling salted water for 2-3 minutes until bright green, then drain and cool.
- In a large bowl, mix blanched broccoli, cheddar cheese, eggs, breadcrumbs, garlic powder, onion powder, salt, and pepper until combined.
- Form mixture into small rounds using a tablespoon or cookie scoop and place on a parchment-lined baking sheet.
- Lightly spray each round with olive oil spray and bake for 20-25 minutes until golden brown.
