Ingredients

  • 2 cups fresh blackberries
  • 1 cup all-purpose flour
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter (cold)
  • 1 cup rolled oats
  • 1 tablespoon lemon juice
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a mixing bowl, combine flour, granulated sugar, salt, and baking powder. Cut in cold butter until crumbly.
  3. Stir in rolled oats until evenly mixed.
  4. Press two-thirds of the mixture into the bottom of the prepared baking dish for the crust.
  5. In another bowl, toss blackberries with lemon juice and brown sugar, then spread over the crust.
  6. Sprinkle remaining crumble mixture on top of the blackberry layer.
  7. Bake for 40-45 minutes until golden brown and bubbly around edges.
  8. Allow to cool before slicing into bars.
