  • 1 cup granulated sugar
  • 1/2 cup unsalted butter (softened)
  • 3 large eggs (room temperature)
  • 2 tsp vanilla extract
  • 1 cup heavy cream
  • 2 cups fresh mixed berries (strawberries, raspberries, blueberries)
  • 1 cup powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C). Grease two 9-inch round cake pans and line with parchment paper.
  2. In a bowl, whisk together flour and baking powder. Set aside.
  3. In another bowl, beat softened butter and granulated sugar until light and fluffy (3-5 minutes).
  4. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  5. Gradually mix dry ingredients into the wet mixture until just combined; do not overmix.
  6. Divide batter between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Cool in pans for 10 minutes before transferring to wire racks.
  7. Whip heavy cream with powdered sugar until stiff peaks form.
  8. Layer one cake on a platter, spread frosting generously, top with berries, then add the second cake layer. Frost the top and sides with remaining whipped cream and decorate with additional berries.
