  • 3 large eggs, at room temperature

Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9-inch springform pan.
  2. In a bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press into the bottom of the springform pan.
  3. Toss diced apples with cinnamon in a separate bowl; set aside.
  4. Beat softened cream cheese until smooth; add sour cream, granulated sugar, and eggs one by one until fully combined.
  5. Gently fold in the cinnamon-coated apples into the cheesecake mixture.
  6. Pour batter over crust and bake for 50-60 minutes until edges are set but center is slightly wobbly.
  7. For the crumble topping, mix flour, oats, brown sugar, cinnamon, and softened butter until crumbly; sprinkle over cheesecake during the last 10 minutes of baking.
