Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, mix melted butter, eggs, and milk until smooth.
  4. Fold diced apples into the wet mixture. Combine wet and dry mixtures gently until just combined; lumps are fine.
  5. For the crumb topping, mix brown sugar, oats, flour, and cinnamon with melted butter until crumbly.
  6. Fill muffin cups two-thirds full with batter and sprinkle crumb topping on each muffin.
  7. Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
