  • 24 ladyfingers (about 7 oz)
  • 1 cup mascarpone cheese
  • 1 cup brewed espresso (cooled)
  • 3 large eggs (separated)
  • 1/2 cup granulated sugar
  • 2 tbsp unsweetened cocoa powder
  • Pinch of salt

Instructions

  1. Brew a strong cup of espresso and let it cool.
  2. In a bowl, whisk mascarpone cheese, sugar, and egg yolks until smooth.
  3. In another bowl, beat egg whites with a pinch of salt until stiff peaks form.
  4. Gently fold the egg whites into the mascarpone mixture until combined.
  5. Quickly dip each ladyfinger into cooled espresso and layer them in a serving dish.
  6. Spread half of the mascarpone mixture over the ladyfingers, then repeat with another layer of dipped ladyfingers followed by the remaining filling.
  7. Dust cocoa powder on top and refrigerate for at least four hours or overnight before serving.
