- 1 cup long-grain white rice
- 1 cup sharp cheddar cheese, shredded
- 1 cup queso sauce (store-bought or homemade)
- 1 cup red and yellow bell peppers, diced
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
Instructions
- Rinse the rice under cold water until the water runs clear. Combine with 2 cups of water and a pinch of salt in a pot. Bring to a boil, then cover and reduce heat to low for 18 minutes.
