  • 1 lb flank or sirloin steak
  • 1 cup long-grain white rice
  • 1 cup sharp cheddar cheese, shredded
  • 1 cup queso sauce (store-bought or homemade)
  • 1 cup red and yellow bell peppers, diced
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Rinse the rice under cold water until the water runs clear. Combine with 2 cups of water and a pinch of salt in a pot. Bring to a boil, then cover and reduce heat to low for 18 minutes.
  2. Season the steak with salt and pepper. Sear in a skillet over medium-high heat for 4-5 minutes on each side until browned. Remove from heat and let rest before slicing.
  3. In the same skillet, sauté diced onions and bell peppers until soft (about 5 minutes).
  4. Add minced garlic, cumin, and chili powder; stir for about 30 seconds until fragrant.
  5. Pour in queso sauce and simmer for 3-4 minutes.
  6. Fold in cooked rice and steak slices; cook for an additional minute to combine flavors.
  7. Serve hot, garnished with fresh cilantro or avocado slices if desired.
