- 1 cup canned pumpkin puree
- 2 cups heavy cream
- 3/4 cup granulated sugar
- 6 large egg yolks
- 1 tsp pure vanilla extract
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 1/8 tsp salt
- 2 tbsp demerara sugar (for topping)
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, whisk together the pumpkin puree, heavy cream, granulated sugar, egg yolks, vanilla extract, cinnamon, nutmeg, and salt until smooth.
- Pour the mixture into ramekins placed in a baking dish and fill each about three-quarters full.
- Pour hot water into the baking dish until it reaches halfway up the sides of the ramekins.
- Bake for 35-40 minutes until set but slightly jiggly in the center.
- Allow to cool at room temperature before refrigerating for at least two hours.
- Just before serving, sprinkle demerara sugar on top and caramelize with a kitchen torch or under a broiler.
