- 1/2 cup light corn syrup
- 1/2 cup filtered water, divided
- 2 tbsp unflavored gelatin powder
- 1 tsp peppermint extract
- 2–3 drops green food coloring
- 1/2 cup semi-sweet chocolate chips
Instructions
- In a mixing bowl, combine gelatin with 1/4 cup of cold water and let bloom for 5-10 minutes.
- In a saucepan over medium heat, mix granulated sugar, light corn syrup, and remaining water until dissolved. Bring to 240°F (115°C).
- Remove from heat and whisk in bloomed gelatin until dissolved.
- Stir in peppermint extract and green food coloring until desired shade is achieved.
- Gently fold in chocolate chips.
- Pour mixture into a greased baking dish; let set at room temperature for 6-8 hours or overnight.
- Cut into squares or fun shapes.
