  • 1 cup whole milk (or buttermilk)
  • 3 large eggs
  • 2 tsp pure vanilla extract
  • ½ cup unsalted butter, melted
  • 1 cup fresh or jarred cherries (pitted)
  • 2 cups freshly whipped cream
  • Dark chocolate shavings for topping

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans with butter and dust with cocoa powder.
  2. In a mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, and salt until combined.
  3. Stir in milk, eggs, vanilla extract, and melted butter until smooth; don’t overmix.
  4. Divide the batter evenly between prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Let cool completely before removing from pans.
  5. Once cooled, slice each layer in half horizontally to create four layers. Layer with whipped cream and cherries between each cake layer.
